10 Buildup along interior panel of ice machine was present today. Ensure to have employees wipe down surfaces to prevent buildup and to maintain clean at all times.
18 Ware washing machine uses chlorine based sanitizer, and concentration was reading above required measures. Concentration read at 200ppm, and should be maintained between 50-100ppm at all times. Refrain from using machine until issue has been corrected. Observed plastic to go bag being used to store flour tortillas in on cart in kitchen by grill. Ensure that all foods are only stored in food grade containers and bags.
37 Ensure all foods are stored 6 inches or more off floor in walk in cooler. Ensure that all foods being stored on shelves in walk in cooler are covered thoroughly to prevent contamination of debris accumulated along racks.

In the meanwhile, until machine is working, ensure that ware washing sink is properly set up at follows: 1. WASH (soap and water) 2. RINSE (water) 3. SANITIZE (bleach water at 50-100ppm) Issue was corrected on site. Ensure that cloth towels are stored in sanitizing solution immediately after each use. Observed towels sitting around on preparation areas.

14 Observed employee sneeze in hands then proceed to handle utensils. Instructed employee to wash hands, which she then washed at three compartment sanitizing compartment. Employee was instructed to wash hands at hand sink and corrected issue. Ensure that all hand washing is conducted at hand washing stations and that hands are properly washed with hot water, soap, and paper towels, each time a task is changed.
