15 Observed employee handling tortillas with bare hands. No documentation presented for this establishment. Gloves are said to be worn at times. Spoke with owner and explained options of using a barrier or using gloves. Ensure that a barrier is used when handling ready to eat foods. If establishment preferes to follow bare hand documentatoini rules, contact inspector for copy of form.
2 Observed shredded cheese sitting at room temperature. Ensure that all foods that are potentially hazardous are held at proper cold holding temperatures of 41 degrees F and below.
33 Cold water is turned off at three compartment sink, while repairs are pending. Ensure that three compartment sink is repaired to readily provide hot and cold water.
Set up for ware washing was not being setup properly. Only middle compartment had wash setup. Ensure to wash all wares in the following manner: 1. wash (dish soap and water)
2. rinse (clean water)
3. sanitize (bleach water maintained at 50-100ppm)
10 All wares and utensils used for preparation and service of food should be maintained clean. Ensure to rotate utensil compartment to remove debris built up along bottom, where clean utensil are stored. Ensure to clean ice machine interior to remove buildup along interior walls and panel.
