21 Observed no food manager present in store while open handling food is being served in establishment. Employee at time also did not have the knowledge of a food protection manager. Correction: Ensure that a food protection manager is present at all times of operation as per 228.31(b) Certified food protection manager shall be present at the food establishment during all hours of operation as required in Food Code, §2-101.11 and §2-102.12.
