37 Ensure that all foods in refrigeration units, and in serving areas are covered at all times. Heavy fly presence was evident in kitchen at time of inspection, where cold hold units, were unopened, as well as where fish was held in hot hold unit.
14 Ensure that each time a task is changed, whether it be using cell phone, wiping surfaces down, or drinking, that gloves are changed and hand washing is done each time a new pair of gloves is donned.
28 Ceviche, and pico de gallo that are prepared and stored more than 24 hours, should be date marked with expiration date no longer than 7 days.
