19 Observed a small copper pipe underneath the three-compartment sink that was too close to the kitchen floor. The copper pipe leads back to the dish washing machine. The inspector spoke with the maintenance staff and instructed them to either cut it, raise it, or a combination of both so that it has a one-inch air gap above the kitchen floor. Ensure that all kitchen plumbing maintains an air gap of at least one inch (1”) above the bar floor. If the diameter of the pipe is larger than one inch, then the air gap is double the diameter (example: A kitchen pipe that has a diameter of two inches NEEDS an air gap of at least four inches above the kitchen floor). This shall prevent contamination of the plumbing lines in the event of a sewage backflow. This rule applies to restaurant grade hoses or plumbing that come from appliances such as ice machines and cold holds. Ensure the following: 5-202.13 Backflow prevention, air gap.
9 Observed raw, shelled eggs, and prepackaged raw chorizo stored above Ready to Eat (RTE) foods such as bread. The inspector instructed the Food Handler to move the bread and other RTE food to the top shelf, have the eggs stored underneath on the second shelf, and store the raw chorizo at the very bottom. Ensure that raw meats are stored below Ready to Eat (RTE) foods such as chopped vegetables, cooked foods, and whole produce. Ensure the correct order for raw meats to prevent cross-contamination. If space is limited within the cold hold unit, then the raw meat may be stored alongside another raw meat if both are separated in their own pans/ containers, and each have a form of cover, lid, or plastic wrapping. There should be adequate space between the two pans/ containers. The Food Handler began rearranging the eggs, bread, and raw chorizo into the correct order. Ensure the following: 3-302.11(A)(1) Food protected from cross contamination by separating, storage, preparation, holding, and display.

19 Observed the PVC pipe of the three-compartment sink going inside the floor drain. Ensure that the PVC pipe is cut so that it has an air gap of at LEAST one inch above the flood plain of the floor drain. 23 Observed that the two faucets of the three-compartment sink had hot water that was reaching 100 degrees Fahrenheit (F) and 101 F. The inspector instructed the Food Handler and the maintenance worker to turn up the water heater so that the hot water at the three-compartment sink and at the curbed mop sink reach a MINIMUM of 110 F. Ensure that the three-compartment sink, and the curbed mop sink reach a MINIMUM of 110 degrees Fahrenheit (F) DURING ALL HOURS OF OPERATION. The hot water temperature CANNOT be lower than 110 F. At the end of the inspection, the hot water was returned to the three-compartment sink (reached 116 F to 117 F). Ensure the following: 5-103.11(B) Does the establishment have sufficient capacity to meet peak hot water demands?

29 Observed that the three-compartment sink did NOT have testing strips nearby. Ensure that the three-compartment sink and Ware Washing machines are always stocked with testing strips so that the staff can check if the sanitizer concentrations are within acceptable parameters (50 to 100 Parts Per Million (PPM) for Bleach/ Chlorine sanitizers, and 200 to 400 PPM for Quaternary Ammonium sanitizers). Ensure the following: 4-302.14 Sanitizing solutions, testing devices. 4-501.116 Concentration of the sanitizing solution shall be accurately determined by using a test kit or other device.
23 Observed that the hot water for the three-compartment sink reached 106 degrees Fahrenheit (F) and then it dropped to 98 F. Ensure that the three-compartment sink, and the mop/service sink reaches a MINIMUM of 110 F during all hours of operation, regardless of water capacity or usage from other valves/ equipment. Ensure that the handwash sink reaches a MINIMUM of 100 F in temperature during all hours of operation. The staff called the maintenance staff to raise the hot water temperature for the three-compartment sink. The hot water was restored and reached 111 F for both faucets of the three-compartment sink. Ensure the following:5-103.11(B) Does the establishment have sufficient capacity to meet peak hot water demands?
