31 Observed that all the handwash sinks in the establishment were only reaching 87 degrees Fahrenheit (F). Ensure that the handwash sinks within the kitchen and bathrooms reach a MINIMUM of 100 F during all hours of operation. Ensure the following: 5-202.12(A) Hand washing facility provide water at a temperature of at least 38 degrees Celsius (100 degrees Fahrenheit) through a mixing valve or combination faucet.
33 Observed that the standing mop sink and the three-compartment sink were only reaching a maximum of 87 to 88 degrees Fahrenheit (F). Ensure that the hot water for the three-compartment sink and mop/ service sink always reach a MINIMUM of 110 degrees Fahrenheit (F) during all hours of operation.
30 Observed that the new food permit for the fiscal year of October 2023 to September 2024 was NOT posted. The inspector shall issue a 10-day Notice of Violation (NOV) for the owner to purchase the food permit for this year. Inspector was informed by Fiscal that a late fee shall be included. Ensure that the establishment owner/ representative purchases the new Food Permit before or during the first month of the fiscal year (October). Ensure the following: 8-301.11.1 Permit Requirement, Prerequisite for Operation.
29 Observed that the three-compartment sink did NOT have testing strips. Ensure that the three-compartment sink is always stocked with testing strips so that the staff can check if the sanitizer concentrations are within acceptable parameters (50 to 100 Parts Per Million (PPM) for Bleach/ Chlorine sanitizers, and 200 to 400 PPM for Quaternary Ammonium sanitizers). The testing strips MUST NOT be expired. Ensure the following: 4-302.14 Sanitizing solutions, testing devices.

31 Employees using three compartment sink to wash hands. Ensure that a dedicated handwashing sink is available to use by employees that is not separated by a door.
5-203.11 Hand washing facilities. at least one hand washing lavatory, a number of hand washing lavatories necessary for their convenient use by employees in areas, and not fewer than the number of hand washing lavatories required by the Plumbing Code shall be provided.
