1 Observed cooked noodles prepped at 7AM temping at 76F at 11AM. Ensure food is cooled from 135F to 70F within 2 hours and then 70F to 41F within an additional 4 hours. Effective methods of achieving this include: 1) placing the food in shallow pans; 2) separating the food into smaller or thinner portions; 3) using rapid cooling equipment; 4) stirring the food in a container placed in an ice water bath; 5) using containers that facilitate heat transfer; 6) adding ice as an ingredient; 7) other effective methods.
