Ensure that these areas are cleaned regularly to prevent a significant buildup of debris as per: 4-602.13 Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
43 Observed the rear of fan unit in walk-in cooler with an accumulation of dust and debris. Ensure that this area is kept free from accumulation of debris as per: 6-501.14(A) Intake and exhaust air ducts shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials.
39 Observed metal containers on drying rack that were cupped together tightly and stacked so that no water may drain completely from these containers prior to placing on drying rack. Ensure that all cleaned wares are dried completely and properly before stacking as per: 4-201.120 Equipment compartments that are subject to accumulation of moisture shall be sloped to an outlet allows complete draining.
