45 Observed a ceiling tile in kitchen area that was in disrepair. Observed pipes no longer being used by prep area in front that were protruding out of the counter, and collecting debris. Ensure that these areas as either replaced or repaired as per: 6-501.11 Repairing. The physical facilities shall be maintained in good repair.
39 Observed an open sheet of brownies stored in the walk-in cooler with a cutting utensil stored next to and touching the open brownies with the handle touching both the brownies and the pan. Establishment voluntarily threw away brownies. Ensure that all utensils are stored outside of food items as per: 3-304.12(A) In-use utensils, between-use storage. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored except as specified under subsection (B) of this section, in the food with their handles above the top of the food and the container.
32 Walk-in cooler in prep area was maintaining a temperature of 65 degrees Fahrenheit. Walk-in cooler was not operating as expected, as some TCS items such as soft cheeses (Mozzarella) were being stored in this walk-in cooler, along with containers of ice-cream mix. Ice-cream mix, after speaking with management and owner, is shelf-stable, and will be moved to a different walk-in cooler of another establishment owned by the same owner. Inspector will visit establishment tomorrow to see if walk-in cooler is fixed, repaired, or replaced. 228.223(h) Equipment and utensil design and construction. safe materials and maintained in good repair.
