3 Sausage links and refried beans found resting between 85 and 101 degrees F at time of visit. According to kitchen staff, products are prepared at 5:30AM, depending on how much traffic is expected. Products are reheated in oven at 300 degrees F until hot. Practice is fine as long as products are reheated to 165 degrees F and maintained at 135 degrees F afterward. ** 228.75(f)(1)(A) Hot Hold (135°F or higher).**

A temperature gun was produced but staff could not find a probe thermometer.
