37 In large mop sink area by baler area, observed multiple hoses without backflow prevention devices. Ensure that all hoses that are in-use have a backflow prevention device as per: 5-304.12 Water tank, pump, hose backflow prevention use.
37 Observed a pipe underneath the fan in a walk-in cooler unit in the receiving and purchasing area that was dripping/ the covering was torn. Ensure that this unit is repaired as per: 4-204.12(D) If a watertight joint is not provided: (A) the piping, temperature measuring device, rotary shafts, and other parts extending through the openings shall be equipped with an apron designed to deflect condensation, drips, and dust from openings into the food; and (B) the opening shall be flanged as specified under paragraph (B) of this subsection.

31 The hot water at the hand sink in the restaurant was not reaching 100 degrees Fahrenheit. Also observed a hand sink behind the bar that was not reaching 100 degrees fahrenheit. Ensure hot water reaches 100 degrees fahrenheit at all hand sinks. The hot water was adjusted on both handsinks. * 228.146(b)(1) Hand washing facility provide water at a temperature of at least 38 degrees Celsius (100 degrees Fahrenheit) through a mixing valve or combination faucet.
31 Observed a sanitize container stored inside the hand sink in the back of the market area. Ensure the hand sink is only used for handwashing. Ensure the hand sink is accessible for use at all times. 39 Observed accumulation inside soda gun dispensers. Ensure soda gun dispensers are maintained clean. 228.114(a)(5)(D) Surfaces of utensils and equipment contacting food that is not time/temperature control for safety shall be cleaned: in equipment such as ice bins and beverage dispensing nozzles and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment: (i) at a frequency specified by the manufacturer; or (ii) absent manufacturer specifications, at a frequency necessary to preclude accumulation of soil or mold.

NOTE: The City of San Antonio Metropolitan Health District presents food establishment "Inspection Scores" calculated from a perfect 100 score minus any identified violations and subsequent demerits.
