15 Observed: Observed cook prepare RTE foods with bare hands without washing hands prior. Cook also set down RTE tortillas directly on counter. Corrective Action: Ensure that when preparing ready-to-eat foods, bare hand contact is limited. Use gloves or tongs as barrier when preparing RTE foods. Wash hands before putting on gloves. As per: 3-301.11(B) Bare hands contact with ready-to-eat foods. 3-301.11(C) Limit bare hand contact with all other foods.
