10 Food containers with potatoe salad and cream corn, should not be stored on pooling water in reach in coolers. Manager explained they usually store containers on a crate to avoid pooling water. Ensure to clean containers where foods are stored (i.e. brisket, chop containers, etc) to remove buildup.
18 Bleach water used for sanitizer, should be maintained at a concentration of 50-100ppm. Verify with proper chlorine test strips.
