7 Observed a Ziploc bag labeled “Para Elote Poblano” filled with cream packets. The cream packets had black and white substance growing on them. Ensure that all food items are in good condition, unadulterated, and safe to consume. Any food item that shows signs of adulteration NEEDS to be discarded immediately. The staff discarded the Ziploc bag filled with creamer. Ensure the following: 3-101.11 Food safe, good condition, unadulterated, and honestly presented.
22 Observed two Food Handler certifications on the wall that expired on 01/16/2019. Ensure that all employees that cook, prepare, or modify food have a Food Handler certification. Inspector highly recommends that the establishment holds a copy of each Food Handlers and Certified Food Manager (CFM) certification in a binder on site to present to the inspectors during each inspection. The establishment is responsible for renewing the certifications before they expire. The inspector also recommends that one other Food Handler becomes a Certified Food Manager (CFM) in the event the main CFM must leave for vacation or take a sick day.
