Discontinue use of this machine and use the three compartment sink to wash/rinse/sanitize until it is fixed. 21 No certified food manager was present at the time of the inspection. Ensure a certified food manager is always present during all hours of operation. 228.31(b) Certified food protection manager shall be present at the food establishment during all hours of operation as required in Food Code, §2-101.11 and §2-102.12.
33 There were no detectable levels of sanitizer dispensing from the mixer at the three-compartment sink during the inspection. The sanitizer jug was changed out and sanitizer began reaching correct levels.
