The food in the unit must be discarded, and the unit repaired. Any food placed back into the unit must be cooled with ice until the unit maintains the proper temperature. Discarded: sausage ground 5 lbs, chicken bits 2 lbs, roast beef 2 lbs, artichoke hearts 2 hearts, diced onions 2 lbs, diced green peppers, 1 lbs, bacon pieces (soft cook) 2 lbs, black olives 2 lbs, green olives 2 lbs, mushroom pieces 4 lbs, and pizza sauce 2 lbs.

47 228.33 (b) Posting of Certified Food Manager (CFM) certificate. Observed no CFM certificate posted in plain view of the consumer. The original CFM certificate must be posted in a location conspicuous to the consumer.
21 * 228.32(2) Being a certified food protection manager who has shown proficiency of required information through passing a test that is part of an Accredited Program. The city amends this in two ways: 1) There must be one CFM in the establishment every shift of 12 or fewer hours; and 2) The CFM must obtain the city issued certificate by completing a course of study acceptable to the director and paying the application fee. The certificate can be obtained by bringing the CFM course certificate to the health the desk at 1901 Alamo St S and paying the $15.45 application fee. Observed there was no CFM in the establishment. Have one CFM with the city certificate whenever in operation.
45 228.186(f) Drying mops. After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Observed mops where kept in the straining devices. Hang the mops up to allow air drying.
