Ensure all employees wash dishes properly by washing with soap and water, rinsing, then soaked in water with a sanitizer such as chlorine or quaternary . 4-703.11(C)(1) After being cleaned food-contact surfaces shall be sanitized an exposure time of at least 10 seconds for a CHLORINE SOLUTION.

Ensure all food is properly stored to prevent any cross contamination. 3-302.11(A)(1) Food protected from cross contamination by separating, storage, preparation, holding, and display.
