1 Observed 3 containers of beans, that were made yesterday, temping at 60 F. Ensure proper cooling methods are used to reach required cooling times by using one or more of the following methods: 1) placing the food in shallow pans; 2) separating the food into smaller or thinner portions; 3) using rapid cooling equipment; 4) stirring the food in a container placed in an ice water bath; 5) using containers that facilitate heat transfer; 6) adding ice as an ingredient; 7) other effective methods. 3-501.14(A)(2) Cooling -- total 6 hours, 135-41°F.
2 Observed walk in cooler temping at 53 F. Ensure all cold hold units are maintaining a temperature of 41 F or below. A technician was on site working on the issue. Ice baths were made in the mean time for food that was being prepped and held in the walk in cooler. Food was also transferred to other coolers for the mean time. 3-501.16(A)(2) Cold Hold (41°F or below).
10 Observed no chlorine sanitizer coming from the mechanical ware washing machine due to an empty chlorine container (connected to the machine). Dishes were not properly being washed/sanitized. Ensure after being cleaned food-contact surfaces shall be sanitized an exposure time of at least 10 seconds for a CHLORINE SOLUTION. Ensure to use the testing strips for the chlorine sanitizer to ensure proper chlorine ranges are being used on food contact surfaces. 4-703.11(C)(1) After being cleaned food-contact surfaces shall be sanitized an exposure time of at least 10 seconds for a CHLORINE SOLUTION.
