23 Hot water at three compartment sink and hand sink were not providing hot water at proper temperatures. Establishment will be visited in morning prior to opening to ensure issue has been corrected to avoid closure. May be pressure issue between sinks. Ensure hand sinks have hot water reaching to 100 degrees F and that three compartment sink is able to reach to 110 degrees F.
32 Lid for deep chest freezer was not in good condition. Ensure that lid is repaired to prevent exposure of insulation. Ensure to rotate cutting board where pizzas are prepared. Ceiling area above oven should be scraped and painted over to remove peeling paint. Ensure all surfaces are smooth, easily cleanable, and non absorbent.
34 Back screen door had gaps along sides and bottom. Ensure that door is sealed tight to prevent pests from entering.
31 Hand sink in front area was no getting hot water reaching to 100 degrees. Hand sink in back area was the same, and was not supplied with paper towels.
27 Cold hold unit where pizza slices and toppings are stored, was not holding adequate temperature. Foods were temping at 61 degrees F. Walk in cooler thermometer was reading at 52 degrees F. Ensure to verify that all coolers are able to hold at 41 degrees F and below. A new unit for cold hold unit is on back order as discussed with owner. Inspector did suggest to use time and temperature control of no more than 4 hours until new unit is installed.
