29 4-302.13 Hot water mechanical ware washing operations, an irreversible registering temperature indicator shall be provided. Observed there was no method for testing the 160 surface temperature for the hot sanitizing ware washing machine. Provide for a irreversible method to test the surface temperature of ware using the hot water sanitizing method.
47 228.31(a) Certified Food Manager (CFM) Certificate posted in conspicuous location. Observed that one CFM certificate was not posted. Post at least one CFM certificate where it is plainly seen by the consumer.
