Ensure a certified food manager is present during all hours of operation. 228.31(b) Certified food protection manager shall be present at the food establishment during all hours of operation as required in Food Code, §2-101.11 and §2-102.12.
33 Hot water at the warewashing sink was only reaching 95F at the time of the inspection. Ensure hot water at the warewashing sink reaches at least 110F. 4-501.19 Manual ware washing equipment, wash solution temperature.
