39 Observed establishment using single use cups and bowls as scoops. Correction: Refrain from using single use utensils as scoops and scoop handles must not contact food product as per and 3-304.12(A) In-use utensils, between-use storage. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored except as specified under subsection (B) of this section, in the food with their handles above the top of the food and the container.
21 Observed no food manager on site. Correction: A food manager must be presnet during all hours of operation as per 2-102.12(A) At least one employee that has supervisory and management responsibility and the authority to direct and control food preparation and service shall be a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program.
22 Talked to only employee in establishment and she said she does not have a food handler certificate and has been employed since september of 2023. Correction: anyone handling food in establishment must have a food handler certifacte as per 228.31(d) Food Handler Training criteria.
29 Observed no sanitizer testing strips in establishment. Correction: sanitizer testing strips are required when sanitizer is in use as per 4-302.14 Sanitizing solutions, testing devices.
18 Observed Chemical sanitizer not at required PPM (reading 100 quat). Tablets are expired. Correction: ensure sanitiing tablets are not expired and check sanitizing solution after making it as per 4-501.114(F)(2) Chemical sanitizer generated onsite, chemical criteria.

21 2-102.11(B) Being a certified food protection manager who has shown proficiency of required information through passing a test that is part of an Accredited Program. Observed no Certified Food Manager present. Ensure a CFM is present during all hours of operation.

NOTE: The City of San Antonio Metropolitan Health District presents food establishment "Inspection Scores" calculated from a perfect 100 score minus any identified violations and subsequent demerits.
