10 Tongs and ice scoopers must be washed, rinsed, and sanitized. Use chlorine solution for sanitizer. Inspector left the 3 sink dishwashing handout and reviewed procedures with Owner. 4-703.11(C)(2) After being cleaned, food-contact surfaces shall be sanitized in a contact time of at least 7 seconds for a CHLORINE SOLUTION of 50 mg/L.
29 Purchase chlorine test strips from any retail restaurant supply stores. Owner took a photo of Inspector's test strips for reference. 4-302.14 Sanitizing solutions, testing devices.

45 Observed ceiling with holes and wood attached for support. Corrective Actions: Ensure that holes in ceiling are repaired. As per: 6-501.11 Repairing. The physical facilities shall be maintained in good repair.
39 Observed ice scoopers stored in hand sink. Corrective Actions: Store ice scoopers in a clean, dry, and protected location. As per: 3-304.12(E) In-use utensils, between-use storage. During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in a clean, protected location if the utensils, such as ice scoops, are used only with a food that is not time/temperature controlled for safety.
31 Observed ice scoopers stored in hand sink. Hot water is turned off at hand sink. Corrective Actions: Do not store items in hand sink. Hand sink is for hand washing only. Turn on hot water for hand sink. As per: 5-205.11 Using a hand washing facility. accessible at all times for employee use; not be used for purposes other than hand washing. 5-202.12(A) Hand washing facility provide water at a temperature of at least 38 degrees Celsius (100 degrees Fahrenheit) through a mixing valve or combination faucet.
