21 Findings: Employee who is a certified food protection manager was not present at the establishment at the time of inspection. Corrective Actions: Ensure that Certified food protection manager is present at establishment during all hours of operation. If leaving another employee as person with supervisory authority, that employee must also be Food Manager Certified. As per: 228.31(b) Certified food protection manager shall be present at the food establishment during all hours of operation as required in Food Code, §2-101.11 and §2-102.12.
29 Findings: Sanitizing test strips could not be procured at time of inspection. According to employee, the test strips are locked in the office. Manager is not present and they have the key with them. Corrective Actions: Sanitizing strips are to be made available and placed in a convenient location for employee use during work hours. Sanitizing strips are to be used to test sanitizer concentration 3 compartment sink. As per: 4-302.14 Sanitizing solutions, testing devices.

NOTE: The City of San Antonio Metropolitan Health District presents food establishment "Inspection Scores" calculated from a perfect 100 score minus any identified violations and subsequent demerits.
