Ensure either thermal test strips or a thermometer that can record the max temp of the rinse cycle are available in the establishment to check the warewashing machine for utensil surface temperature of 160°F. 4-302.13 Hot water mechanical ware washing operations, an irreversible registering temperature indicator shall be provided.
33 The warewashing machine's rinse cycle dial was only showing a temperature of 120°F at the time of the inspection. Ensure the hot water warewashing machine's rinse cycle is reaching at least 180°F.
