41 Prepared food items in cold unit were not labeled with the names. Sugar was not labeled. All food items that are stored must be labeled as per 3-302.12 Food storage containers, identified with common name of food.
39 the 3 compartment sink will need to be sealed to the wall to prevent water from getting behind sink as per 4-402.11(A)(3) Equipment that is fixed because it is not easily movable shall be installed so that it is sealed to adjoining equipment or walls, if the equipment is exposed to spillage or seepage.
28 Prepared food in refrigerator from Saturday was not labeled with a USE BY date. A use by date is required on food stored for more than one day. The USE BY date is calculated as the day of preparation plus 6 days. Prepared food should never see the same day twice as per 3-501.17(A) Date marking prepare on site RTE/ TCS food.
29 Sanitizer test strips must be provided while in operation as discussed per 4-302.14 Sanitizing solutions, testing devices.
NOTE: The City of San Antonio Metropolitan Health District presents food establishment "Inspection Scores" calculated from a perfect 100 score minus any identified violations and subsequent demerits.
The demerits system is computed based upon the number of violations found during a regular food establishment inspection. There are three categories of demerits and each are assigned a demerit score of 3, 2 or 1 points.
A total demerit score of zero (0) indicates no violations were noted at the time of the inspection and is therefore reflected in a calculated "Inspections Score" of 100.
