10 Observed utensils not being sanitized properly. The thermal ware washing machine was not reaching a rinse temperature of 180 F. The wash temperature reached 160 F and the surface temperature was reaching at 135 F. Ensure the ware washing machine is sanitizing properly where the rinse temperature reaches 180 F and the surface temperature reaches 160 F. Ensure to obtain thermal testing strips for the ware washing machine. 4-703.11(C)(4) After being cleaned, equipment food-contact surfaces and utensils shall be sanitized in an exposure time used in relationship with a combination of temperature, concentration, and pH that, when evaluated for efficacy, yields sanitization as defined in §1-201.10(B) of this title (relating to Definitions). 4-703.11(B) Hot water mechanical sanitization achieving surface temperature of 160°F.

18 * 228.204(a)(1) Approved Poisonous/toxic materials or chemicals. Observed residential pesticides in the establishment. Use pesticides which the manufacturer's label instruction state that its use is allowed in a commercial food establishment or use a licensed pest control company.
21 * 228.33(a) At least one employee that has supervisory and management responsibility and the authority to direct and control food preparation and service shall be a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program. Observed no CFM at time of inspection. During each shift of twelve (12) or fewer hours there is at least one CFM employed in a supervisory capacity during all hours of open food handling.
46 228.149(e)(2) A plumbing system shall be maintained in good repair. Observed handsinks with plumbing not working properly. Ensure plumbing is repaired/adjusted to provide hot and cold water at all times.
