Food containers, pans, baking sheets, etc... shall be stored as per 4-903.11(B)(2) Clean equipment and utensils shall be stored as specified under paragraph (1) of this subsection and shall be stored covered or inverted.

24 Cake and tortillas were packaged and on counter and/or refrigerator where customers could grab them. When food is in reach of the customers it must meet all packaging label requirements. Also, food packaged in one location and sold in another, must provide a label as per: 3-602.11(A) Food packaged in a establishment, shall be labeled as specified in law. 3-602.11(B)(1) Label include the common name of the food, an adequately descriptive identity statement. 3-602.11(B)(6) Label include nutrition labeling. 3-602.11(B)(2) Label include if made from two or more ingredients, a list of ingredients and sub-ingredients in descending order. 3-602.11(B)(3) Label information shall include an accurate declaration of the quantity of contents. 3-602.11(B)(4) Label include the name and place of business of the manufacturer, packer, or distributor.

19 Hose attached to hose bib by 3 compartment sink did not have a backflow preventer/air breaker. Ensure a backflow preventer is installed between hose and hose bib as required under 5-203.14 Backflow prevention device, when required.

7 Findings: Salsa containers expanded. 3-101.11 Food safe, good condition, unadulterated, and honestly presented.
28 Prepared foods were improperly labeled. The food was missing a label with the day of preparation. Food should be marked with an identifier name, date of preparation and a discard date. Date of preparation is day one, plus 6 for a total of 7 days. *3-501.17(A) Date marking prepare on site RTE/ TCS food. The longest USE BY date is the day of preparation plus 6 days.-
