7 Observed mold on corn tortilla chips that have yet to be fried, along with moldy cucumbers. Both of these items were stored in walk in cooler in back area by meat market (for restaurant storage). Ensure that all foods are in sound condition and free of spoilage.
18 Bleach concentration in sanitizing buckets was too high in preparation. Storing purple liquid cleaner next to food and food conact surfaces. Bleach water concentration for cloth sanitizers was high. Ensure to maintain sanitizer between 50-100ppm.
29 Establishment did not have test strips for sanitizer. Ensure that all units stored cold holding foods have thermometers at all times, and that test strips are provided to employees for proper use.
32 Ceiling tiles that are warped, broken, or missing should be replaced and repaired. Wall laminate near three compartment sink in meat market area that is peeling off of wall should be replaced. Siding and baseboards along walls in establishment should be replaced and repaired. If a leak is present in roof, issue should be repaired and corrected properly to discontinue leak in produce storage area as well as in any other part of establishment. Ensure that any raw wood used for repairs, is properly primers or painted. All surfaces in establishment should be smooth, easily cleanable, and non absorbent.
31 Hand sink at entrance of taqueria did not have paper towels. Ensure that all hand sinks are readily available and no items are in front of sinks, blocking sinks. Ensure that all hand sinks have hot water reaching up to 100 degrees F, paper towels, and hand soap, at all times.
33 Three compartment sink in meat market and produce should have hot water that is able to reach up to 110 degrees F. At this time, water is only reaching up to 108 and 105 degrees F, respectively.
36 Observed cloth towels laying on preparation tables in restaurant. Ensure that cloth towels are stored in sanitizing solution immediately when not in use, in properly concentrated solutions.
37 Prepared foods in walk in cooler that are stored for taqueria, should be covered completely at all times. Any leakage from air conditioning units in walk in coolers should be monitored and corrected as needed to prevent from contaminating foods and items stored in establishment. Back door near taqueria should be kept closed at all times.

Labels also indicated that the date of shelf life expires March 3, 2023. Ensure that labels are corrected and ensure that proper directions and expiration dates are maintained. Such item, pork lard, should be either held under refrigeration of 41 degrees F, have documentation to prove that item does not need to be held under proper temperature, or should have labels corrected to not state they need refrigeration, if items does not need to be refrigerated.
28 Prepared foods for taqueria, are stored in walk in cooler in back area, but did not have proper date marking labels. Ensure that all foods opened from original packaging, and all prepared foods are date marked with expiration date of no more than 7 days.
