MUST BE KEPT HOT OR COLD (135 F OR HOTTER OR 41 F OR BELOW) OR CAN USE "TIME ONLY AS A HEALTH CONTROL" IN WHICH PRODUCT IS NOT KEPT HOT OR COLD, BUT IS DISCARDED IF KEPT IN DANGER ZONE OF 41-135F FOR 4 HOURS. FOR THIS, TWO THINGS ARE REQUIRED. 1) WRITTEN PROCEDURES, AND 2) RECORD KEEPING. THE WRITTEN PROCEDURES JUST STATE "THIS IS THE PROCEDURE WE USE WITH THIS FOOD ITEM" AND TELL OF THE PROCEDURE. EXAMPLE: "THIS ESTABLISHMENT USES TIME AS A HEALTH CONTROL FOR COOKED BOBA." THE RECORD KEEPING IS JUST SOME WAY OF TRACKING HOW LONG THE FOOD HAS BEEN OUT OF TEMPERATURE CONTROL. EXAMPLES CAN BE A LOG SHEET, POST IT NOTES, OR OTHER MEANS OF SAYING WHEN ITEM WAS REMOVED FROM TEMPERATURE CONTROL AND THEREFORE WHEN IT MUST BE DISCARDED.
