29 Observed broken temperature measuring device for the ware washing machine. The temperature measuring device must accurately display the water temperature in both the wash and rinse tanks. Ensure the temperature measuring device is properly working/calibrated. Ware washing Machine hot water must reach a final rinse temperature of 180F. 4-204.115(A) Ware washing machine shall be equipped with a temperature measuring device that indicates the temperature of the water in each wash and rinse tank.
