For manually operated sinks, disposable paper towels are required to aid in not recontaminating the hands when turning off the faucet.

Food temperature at 5 degrees Celsius (41 degrees Fahrenheit) or less. 228.75(c)Thawing. under running water criteria. 228.75(c)(3)(B) TCS food shall be thawed as part of a cooking process if the food that is frozen is thawed in a microwave oven and immediately transferred to conventional cooking equipment, with no interruption in the process. 228.75(c)(4) TCS food shall be thawed using any procedure if a portion of frozen ready-to-eat food is thawed and prepared for immediate service in response to an individual consumer's order.
