9 Observed raw shrimps, fish, and raw eggs (with one egg cracked and exposed) sitting on shelves above ready to eat and already cooked products. Ensure that all raw products are stored in an area below and or away from ready to eat foods and cooked foods.
10 Thoroughly clean interior and handles of microwaves, cold hold units, lids, areas around compartments were ingredients are stored. Observed gaskets needing to be cleaned as well as shelves where clean wares are stored, and food containers. Plastic coverings along metal shelves should be cleaned to remove food debris.
15 Observed employee using bare hands when cutting onioncs. Ensure that proper bare hand documentation is presented if desired to follow such method, or as establishment has stated to do so, continue to wear gloves when handling ready to eat foods.
27 Reach in cooler across grill does not allow for proper closing of doors. Ensure that gaskets are replaced and doors are able to suction closed, to ensure that cold holding temperatures are maintained and held throughout the day and night.

Ensure that proper cooling procedures are performed, as follows: Once food is removed from cooking, and reaches 135°F food is allowed 2 hours maximum to cool to 70°F. Food is then allowed 4 hours maximum to cool to 41°F. Food can be stored away once it has reached 41°F in cooling process.
10 Observed food containers on floor, then onto stove top. Observed dust accumulated along vents and racks where items were stored. Observed refrigeration units to have buildup. Ensure to clean and sanitize all surfaces that may become contaminated prior to continuing procedures. Ensure to clean, sanitize, and maintain all surfaces to be clean and free of debris.
