3 Hot case was holding foods at 110-112F. Ambient thermometer inside back of case also showed 110F as temperature. Food items were removed. Those items may be reheated and stored in case as long as: 1) the case can maintain and ambient air temperature of 135F-140F or higher. 2) Thermometer is moved to front of case (see item #29)3-501.16(A)(1) Hot Hold (135°F or higher).
29 The thermometer at the back of the hot unit shall be moved to the front near the door. The thermometer in a hot hold unit must be kept in the coolest part of the unit (by the door in this instance) as per 4-204.112(A) In a mechanical hot FOOD storage unit, the sensor of a TEMPERATURE MEASURING DEVICE shall be located to measure the air temperature or a simulated product temperature in the coolest part of a hot FOOD storage unit.
