10 Sanitizer used is quaternary based. Currently, large compartment for ware washing, and small pails for cloth towels had been prepared and read under required concentration. Ensure that concentration of sanitizer is maintained between 200-400ppm for proper sanitization.
21 No Certified Food Manager was present during today's inspection. Ensure that at least 1 Certified Manager WITH certificate posted, is present during all hours of operation. Establishment will have a follow up in 10 days to verify status for this.
