28 Observed a metal pan of queso with a Use By date of 10/18/2024 (preparation date was missing). Observed a ziploc bag of cooked chicken with a Preparation date of 10/15/2024 (missing the Use-By date of 10/21/2024). The inspector educated/ reminded the kitchen staff that all TCS food and beverages are required to have prep and Use-By dates labeled within the first twenty four hours they are stored inside a refrigeration unit. Ensure that any Time/ Temperature Control for Safety (TCS) food or beverages, such as cut/ sliced produce, marinated raw meats, and cooked TCS food, stored within the establishment are given a preparation date and a Use-By date. The Use-By date has up to twenty-four (24) hours to be labeled on the container/ tray from the time it is placed inside a cold hold unit. The TCS food item or beverage MUST be discarded after seven days at the end of the shift (7 days: day of preparation and six days after that). Ensure that the dates are correct. The staff wrote down the missing dates on each container and bag of food vefore the inspector left. Ensure the following: 3-501.17(A) Date marking prepare on site RTE/ TCS food.
10 Observed two white containers in the sanitize solution within the three-compartment sink. The inspector observed the sanitizer solution have a concentration less than the REQUIRED 200 Parts Per Million (PPM). Ensure that all food-contact surfaces are clean to sight and touch. Ensure that Bleach/ Chlorine sanitizers have a concentration of 50 to 100 Parts Per Million (PPM), and Quaternary Ammonium sanitizers have a concentration of 200 to 400 PPM. These concentrations are NEEDED to effectively sanitize food-contact surfaces and nonfood-contact surfaces. If the concentrations are too high, then the sanitizers shall contaminate the food-contact and nonfood-contact surfaces of the dishes. If the concentration is too low, then the surfaces shall not be disinfected, and the growth of pathogenic microorganisms shall contaminate the next food item that is placed. The dishwasher rewashed the to white containers. Ensure the following: 4-601.11(A) Food-contact surfaces clean to sight and touch. 4-501.114(C) Quaternary ammonium compound solution concentration indicated by the manufacturer's instructions. 4-702.11 Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning.
47 One Food Handler was missing their Food Handler document during the end of the inspection. The food handler and one other helper took the time to help them find the copy digitally. The inspector instructed them to print it out and have it posted so that the NEXT inspector could view it easily. The new Food License has NOT been purchased or posted yet. Please purchase the permit within ten days (by end of day 10/25/2024). Ensure that the CURRENT Food Establishment Inspection Report, the CURRENT Food Permit/ License, and at least one Certified Food Manager certification (that is NOT expired) is posted in a conspicuous (clear view) location within the establishment for all clients to view. Each Food Handler certification MUST be stored in a binder/ folder on site and the copies MUST NOT be expired. The Food Handler is responsible for renewing their certification before the expiration date. The food handler also has the option to present the copy digitally if they can produce upon request. Ensure the following: 228.31(e) The food establishment shall maintain on premises a certificate of completion of the food handler training course for each food employee. 8-304.11(A) Permit posted.

Ensure there are weather strips on the exterior doors of the establishment so that no light may enter the facility. Observed a trap in the mop sink room with 10 roaches trapped in it. Ensure the traps are checked frequently and professional pest control measures are taken to eradicate the pests. 6-501.112 Removing dead or trapped birds, insects, rodents, and other pests.
