19 Observed that the handwash sink plumbing (located to the right of the ice machine, the three-compartment sink plumbing, and the two plumbing pipes that come from underneath the ice machine did NOT have an air gap of one inch above the highest point of the cement perimeter around the floor drain. Ensure that all kitchen plumbing maintains an air gap of at least one inch (1”) above the grating of the floor drain. If the diameter of the pipe is larger than one inch, then the air gap is double the diameter (example: A kitchen pipe that has a diameter of two inches NEEDS an air gap of at least four inches above the kitchen/ floor drain). This shall prevent contamination of the plumbing lines in the event of a sewage backflow. This rule applies to restaurant grade hoses or plumbing that come from appliances such as ice machines and cold holds. Ensure the following: 5-202.13 Backflow prevention, air gap.
29 Observed that the three-compartment sink was NOT stocked with Bleach/ Chlorine testing strips for the staff to test the concentration of Chlorine sanitizers. The owner stated that they only Wash the ice scooper and pickle tongs with soap and water. The inspector told the owner that since these utensils directly touch food (ice is considered a food item when used for sodas), they MUST also Rinse and Sanitize the food-contact utensils each day. Ensure that the three-compartment sink is always stocked with testing strips so that the staff can check if the sanitizer concentrations are within acceptable parameters (50 to 100 Parts Per Million (PPM) for Bleach/ Chlorine sanitizers, and 200 to 400 PPM for Quaternary Ammonium sanitizers). The testing strips MUST NOT be expired. Ensure the following: 4-302.14 Sanitizing solutions, testing devices.
39 Observed raw wood below the coffee machine. Observed raw wooden shelving in the three-compartment sink storage room and observed a raw wooden door and doorframe. Ensure all raw wood equipment is sealed and painted to prevent water being absorbed into the wood and making it rot (growth of bacteria). Ensure the following: 4-501.11 Good repair and proper adjustment.
42 Observed greenish/ blackish substance on the inside surfaces of the ice machine. Ensure that all Non-Food Contact Surfaces are cleaned and sanitized with Bleach/ Chlorine solutions that have a concentration of 50 to 100 Parts Per Million (PPM), or with Quaternary Ammonium solutions with concentrations of 200 to 400 PPM. This shall prevent the growth of pathogenic microorganisms that can contaminate food. Ensure the following: 4-601.11(C) Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.

45 Ensure the three water damaged tiles above the three-compartment sink are replaced by next routine inspection. Ensure the following: 6-501.11 Repairing. The physical facilities shall be maintained in good repair.
