45 Ceiling area in dish pit, ware washing room was covered in moist debris due to steam, and ceiling tiles were not in place properly to prevent buildup of moisture. Ensure that the ceiling in this area is constructed of smooth, easily cleanable, and durable ceiling material as per: 6-201.11 Cleanability. 10 Observed lots of food contact surfaces stored directly underneath dripping ceiling covered in moist debris in ware washing room. Ensure that all food-contact surfaces are cleaned as per: 4-602.11(A)(5) Food-contact surfaces cleaned any time when contamination may occur.
